My only hope is that the raid encounters will be as challenging as the real thing and that my fellow raiders will be willing to sit through nights of nothing but wipes as we learn the encounters throughly.

So I guess my next question is do we have any hardcore raiding guilds on the server? Also how many original accounts do we have (how many actual players)? Do things like the dungeon finder tools work?

well, in this server we have plenty people who like raiding ( like me ) and plenty people who like pvp combat.
As i know, there are several hardcore raiding guilds on Alliance but i don't know how many on Horde.
random dungeon finder works well, but there are several dungeon still error so we cannot use it.Ex : Drak'Tharon keep

because command .s info is not working anymore to know how many online player, just /who >>> delete the current zone on the text box (to show the whole player on your faction) >>> then click refresh. it will show how many online player on your faction.
do the same on the opposite faction. since you can create chararacter on both faction here. just sum the quantity of both faction to know how many online player on the realm.
